Dining & Nutrition
Lunch in the Green Vale dining hall is a family-style experience.
A variety of nutritious lunch selections is prepared daily from scratch by Chef Jason Protter and his team for students in Pre-Kindergarten through 8th Grade as well as all faculty and staff. Classmates are grouped at tables with a designated teacher in a sunlit room that has been a beloved feature of the Green Vale campus for generations. Walls are lined with tiles carved by graduates from the 1950s and '60s. A non-sectarian grace or moment of silence is observed during each of the three lunch periods. Students are expected to exercise appropriate table manners while eating and socializing and encouraged to try new foods.

Sandwich Bar
In addition to a featured hot meal for lunch (with vegetarian option), students may make selections from a sandwich bar that features Boar's Head meats and cheeses and a selection of breads including several whole grain options.
Soup
Rotating daily homemade soups.
Salad Bar
A self-serve buffet of cold vegetables, whole grains, legumes and other salad toppings is available every day. Compose your own salad or sample one of Chef Jason's featured creations such as Brussels sprouts and apple slaw.
Snacks
A daily snack is provided to students in all grades.
